RECIPE

Cultural Awareness: Cooking
1) Ìresì Jòlóòfù (Jollof Rice)
Ingredients:  
Rice   Butter or Vegetable Oil
   Tomato Paste  Salt and Spices <Curry, thyme, onions, etc> (Fish or Meat bits (optional))
 1) Boil the Water.
 2) Add butter (or oil) to the boiling water. Allow the butter to melt or cook the oil of  a minute or two
 3) Add all the other ingredients except the Rice 
 4) Cover and boil for about three minutes  5) Measure and wash rice
 6) Add Rice to the boiling mixture, reduce the fire. 
 7) Cook till rice is soft / cooked with very little trace of water
 8) Stir pot’s content repeatedly. 

2) Obé Èfó Elégúsí (Spinnach Sauce)
Ingredients:  
Spinnach (Frozen or fresh)  Pepper, Onions and tomatoes Vegetable Oil    Salt and Spices
   Melon seeds (Ègúsí): Optional?! (Meat / Fish bits (optional))
 1) Cut the spinnach and wash it: then boil some water and pour on it. (If frozen,  defrost by cooking in a   little amount of water, cover and leave aside. 
 2) Blend the mellon seeds dry; if this is tough, add a little bit of water. Put aside.
 3) Now cut the peppers, Onions and tomatoes into bits  and blend them together.   Put this aside. 
 4) Meanwhile, if you are going to use meat or fish bits, cook this and put it aside. 
 5) Warm the oil. Pour the blended pepper into the hot oil and fry. 
 7) After a few minutes, add the meat or fish bits, the spices and salt.
 8) Fry the pepper for a while (but be careful not to burn it). After a while add a   little water.
 9) Cook for a few minutes and then spead the spinnach in it, without any water.  Stir the pot. Add a little more water for the sauce.
 10) Wait a while, then spread the Egusi or pour it into it. Cover for a few minutes.  Its ready to serve (skip steps with mello seed/Egusi, unavailable).

3) Dòdò (Fried Plantain)
Ingredients:  
Plantain  Salt and Spices <Curry, thyme, onions, etc>  Vegetable Oil  
1) Peel the plantain.
 2) Cut the plantain into little pieces- You can cut them which ever way you want.
 3) Add Salt and Spices (spices are optional)
 4) Warm up the oil.
 5) Fry the little pieces until golden color.

4) Obè Adìye (Chicken Sauce)
Ingredients:  
Chicken  Pepper, Onions and tomatoes Vegetable Oil  Salt and Spices <Curry, thyme, onions, etc>
 1) Cut the chicken into sizeable parts, if whole. 
  2) Cook the chicken with salt, spices and onions in amount of water. 
 3) While the chicken is cooking, cut the peppers, onions and tomatoes into bits and  blend them together. 
 4) Cook the blended pepper-mix in an open pot, add some salt.
 (Optional: 5) Fry the cooked chicken till golden brown)
 6) Add oil and the left-over water from cooking the chicken to the cooking pepper- mix. Continue cooking.
 7) Add the (fried) chicken to the sauce on the fire. 
 8) Add  more spices and salt to taste. Cover and allow it to cook for  about five  minutes. (Add enough water to ensure that the sauce is not too thick).                      It is ready to serve

5) Túwó (Corn Meal)
Ingredients:    
Corn Meal  Water
 1) You need a big pot, a wooden stirrer or strong spoon and water
 2) Let the water in the pot reach a high boiling point
 3) Save some hot water on the side
 4) Pour in the corn meal (as with making grits but aim for a more solid form) and  stir strongly. Add flour till it is in a solid ‘mould’
 5) Continue stirring strongly until all flour has changed form.
 6) Add water as needed to make it soft

WARNING:  The meal gets stronger the longer it is cooked, so try and make your    final product a little bit soft!!

6) Èwà Sísè (Cooked beans)
Ingredients:  
Beans (Black eyed peas) Onions (A big one)  Salt?!
Note: Beans can take a while to cook, so be patient.
 1) Boil water.    2) Cut the onion and add to the boiling water
 3) Measure and wash beans  4) Add beans to the boiling water
 5) Continue cooking until the beans are soft--- you will continually  need to, check  the beans’ texture and water till it is well cooked.
 6) Add salt after a couple of checks.

7) Dundu (Fried Yam)
Ingredients:  
Yam (or white potato)   Vegetable Oil  Salt and Spices <Curry, thyme, onions, etc>
 1) Cut the yam into little pieces- You can cut them which ever way you want.
 2) Boil the little pieces in litte water.  3) Add Salt and Spices
 4) Let it cook for a while then drain.  5) Warm up the oil.
 6) Fry the yam until golden color.
Note: You can omit steps 2 to 4, but it would involve more frying time and also a lot more cooking oil.

8) Akara (Bean cake)
Ingredients:  
Black-eye peas / or red skin peas / Beans
   Pepper, Onions and tomatoes    Vegetable Oil  Salt and Spices <Curry, thyme, onions, etc>
   Fish or meat or seafood (optional)
 1) Soak the beans in water (for a several hours or day)
 2) When soften, remove (peel) the out skin of the beans completely- this will give  you a white-like color.
 3) Grind/Blend the beans together with the pepper, onions and tomatoes. 
 4) You can also add cut up pieces of fish and peppers into the grinded mixture (#4  is optional)     5) Warm up the oil
 6) Using the cooking spoon, fry the grinded mixture in small balls.
 7) Turn the side over after a while. Fry till both sides are golden brown.
  Its ready to serve

Ingredients:  Pepper, Onions and tomatoes  Vegetable Oil  Salt and Spices <Curry, thyme, onions, etc>
 1) Cut the peppers, onions and tomatoes into bits and blend them together. 
 2) Cook the blended pepper-mix in an open pot, add some salt.
 3) Add  more spices and salt to taste. Cover and allow it to cook for  about five  minutes. (Add enough water to ensure that the sauce is not too thick).                         
Its ready to serve.
