Courses
A total of 15 credit hours, comprised of four required courses and 6 credit hours of electives, are necessary to successfully complete the program. The following courses are required:
AESC 3125 Organic Agricultural Systems
(4 hours)
This course introduces students to the theories, practice,
and policy of organic agriculture. Topics covered include
the history and the need for organic agriculture, fundamental
organic farming practices, organic animal production, the
National Organic Program, and economic and marketing considerations
for organic products.
Note: Alternative to AESC 3125
ECOL 3700 Organic Agriculture: Ecological Agriculture and the Ethics of Sustainability
( 4 hours)
(5 hours lecture and 25 hours lab per week)
This interdisciplinary maymester field course will explore the fundamental principles of sustainable agriculture through hands-on experience at an operating organic farm and agroforestry research center. Also includes a critical discussion of the social, political, and cultural issues involved in creating a more sustainable food system.
Non-traditional format: Hands-on experience at an operating organic farm and agroforestry research center.
Offered Maymester every year.
AESC 3126 Fertility and Pest Management in Organic Agriculture
(3 hours)
This course is composed of modules on management and fertility
of soils, cover crops and weed management, arthropod pest
management, disease management, and integrating these techniques
into an organic management plan as required for organic certification.
AESC 4095 Undergraduate Research in Organic Agriculture
(1-3
hours)
This course is the capstone experience to the program, where
students design and execute projects with the help of a faculty
member with expertise in the student’s area of interest.

AESC 4950 Organic Agriculture Internship
(1-3 hours)
This course is the capstone experience to the program, where students work on an organic farm, and learn organic procedures, production, certification, maintenance, and business management. The course will be administered through the student’s major department.

(1 hour)
This is the final course in the program, where students hear
industry speakers, discuss case studies, and present their
research projects.
