and enzymatic synthesis of fat substitutes and structured lipids, their
properties, application and metabolism. Food emulsifiers; enzymatic
modification of lipids and phospholipids; synthesis of flavor and fragrance
compounds; food additives; oxidative stability of lipids. Recovery of
